Definition
A compound that is formed when the casein protein is chemically extracted from skim milk. Commonly used as a food additive and nutritional supplement. Found in protein powders, baked goods, ice cream, cheese, medications and soaps.
Health Impact
Some people have an allergy to casein (especially common in children) that can cause diarrhea and vomiting. May contain glutamate, an ingredient in MSG that can cause headaches, muscle tightness, numbness, tingling, weakness and flushing in some people. People who are sensitive to MSG should avoid sodium caseinate.
