Definition
A glycerol molecule with one fatty acid chain. Most monoglycerides used in food production are typically derived from plant sources like soybean and palm oil and are therefore dairy-free. However, it's possible for monoglycerides to contain dairy if they are derived from milk.
Health Impact
Contain small amounts of trans fats, which are linked to an increased risk of heart attack and stroke.
